Cowboy Cookies

  • 1 cup of flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup of butter, softened
  • 1/4 cup + 2 tbsp brown sugar
  • 1/4 cup + 2 tbsp white sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 3/4 cup of oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup of sweetened shredded coconut
  • 1/4 cup pecans pieces


Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

Sift together the flour baking soda, salt, and baking powder until well mixed.

In a separate bowl, beat together the butter, brown sugar, and white sugar until creamy. Add the egg and vanilla then continue to beat until well combined.

Slowly add the flour mixture to the sugar mixture until mixed well. Add the oats, chocolate chips, white chocolate chips, coconut, and pecans. Mix until just combined.

Spoon the dough onto the silpat lined baking sheet about 2 inches apart. Place into the oven and bake for 10-12 minutes. 

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before moving them to a wire rack to continue cooling. Enjoy.
