Zucchini and Walnut Muffins

  • 2 cups of whole wheat flour
  • 1 cup of flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 cup of brown sugar
  • 1/4 cup of white sugar
  • 2 eggs
  • 1/4 cup canola oil
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1 1/2 cup zucchini, grated
  • 1 cup walnuts, chopped

Preheat the oven to 350 degrees. Coat a muffin tray with cooking spray.

Combine the flours, baking powder, salt, cinnamon, and pumpkin pie spice in a small bowl. 

In a separate bowl, combine the sugars, eggs, oil, milk, and vanilla. Slowly combine the dry ingredients into the wet ingredients. Once the mixture is well combined, fold in the grated zucchini and chopped walnuts.

Spoon the mixture into the prepared muffin tray.

Place into the oven and bake for 18-20 minutes or until a tester inserted in the center of the muffins comes out clean. 

Let cool on a rack for 10 minutes. Serve plain or slathered with butter. Enjoy.
