Peanut Butter, Oatmeal and Chocolate Chip Cookies

  • 1/2 cup butter, melted
  • 1/3 cup granulated sugar
  • 1/2 cup peanut butter (smooth or chunky)
  • 1/3 cup firmly packed light brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup old-fashioned oatmeal, uncooked
  • 3/4 cup chocolate chips (optional)

Preheat oven to 375 degrees.

Using an electric mixer, combine butter and granulated sugar in a large mixing bowl until fluffy. Add peanut butter and brown sugar, beating well until thoroughly combined. Scrape the sides of the bowl with a spatula. Add egg and vanilla then mix until smooth.

In a small bowl stir together flour and baking soda, then add to cookie dough and mix just until blended. Using a mixing spoon, stir in oatmeal and chocolate chips.

Scoop balls of cookie dough and place 2 inches apart on ungreased cookie sheets.

Bake for 8 to 10 minutes, or until cookies are lightly browned.

Remove from oven and let cool 5 minutes before removing from cookie sheets. Enjoy.
