Rice with Apricots and Pistachios

  • 1 cup of white or brown rice, prepared per instructions 
  • 1 tsp lemon zest 
  • 4-5 dried apricots, chopped into small pieces 
  • 1/4 cup pistachio nuts, shelled 
  • 1 tbsp fresh parsley, chopped 
  • Sea salt and fresh cracked pepper, to taste 

Prepare the rice per instructions. 

Once the rice is done, add the lemon zest, dried apricots, pistachio nuts, and parsley then season with salt and pepper. 

Mix thoroughly and serve immediately. Top with a bit of butter for a richer flavor. Enjoy.
