- 1 cup of white or brown rice, prepared per instructions
- 1 tsp lemon zest
- 4-5 dried apricots, chopped into small pieces
- 1/4 cup pistachio nuts, shelled
- 1 tbsp fresh parsley, chopped
- Sea salt and fresh cracked pepper, to taste
Once the rice is done, add the lemon zest, dried apricots, pistachio nuts, and parsley then season with salt and pepper.
