Rancheros Sauce:
1 tsp olive oil
1/2 sweet yellow onion sliced
1/2 seeded jalapeno (optional)
1 clove of garlic minced
1 14oz can of diced tomatoes
1 3 oz can of whole green chiles chopped
Dash of cumin & chili powder
Salt and pepper to taste
Add olive oil to a heated pan. Cook onions and jalapeno until soft; add garlic and cook for 30 seconds before adding tomatoes plus remaining ingredients. Cook on low for 10 minutes.
Other Ingredients:
2 corn tortillas per person
1/2 cup (non fat) refried beans per person
1/4 cup (low fat) shredded cheddar cheese
2 eggs per person
2 dollops (non fat) sour cream per person
Fresh chopped cilantro & sliced green onion
Cook tortillas in either a, pan, oven or panini grill until crispy. You do not need any oil to make these tortillas crispy & delicious - I promise. Heat refried beans. Cook eggs over easy. Spread beans on each crispy tortilla, add cheese, then an egg to each tortilla. Add rancheros sauce and a dollop of sour cream to each. Add sliced green onion and cilantro to the top. It's quick and so good! Enjoy.
